Why "a tablespoon" isn't always the same size

This converter uses US customary definitions: a US cup is exactly 236.588 mL, a US tablespoon is exactly 14.787 mL (3 teaspoons), and a US fluid ounce is exactly 29.574 mL. Outside the US, things get confusing fast — a metric tablespoon used in Australian, UK and many international recipes is defined as a flat 15 mL, and an Australian cup is 250 mL rather than 236.588 mL. If a recipe's origin isn't stated, a one- or two-milliliter difference per tablespoon rarely matters for cooking, but it's worth knowing which system a recipe was written in before scaling it up significantly.

Why this tool sticks to volume, not weight

You'll notice this converter doesn't convert cups of flour to grams, or tablespoons of butter to ounces by weight. That's deliberate: a cup of flour and a cup of sugar weigh very different amounts because of how densely each ingredient packs into the same volume, so a single "cup to grams" conversion would need a different factor for every single ingredient. Converting between volume units (cup to mL, tablespoon to teaspoon, and so on) is exact math with no guessing involved, which is what this tool focuses on.
